Cherry tomatoes sautéed with garlic and basil


  • two tablespoons of vegetable oil, divided
  • 2 pints cherry or grape tomatoes
  • Salt and pepper
  • 2 garlic cloves, minced
  • a tablespoon of chopped fresh basil


Heat 1 Tb. olive oil in a 12-inch skillet over medium-high heat until he just starts smoking. Add the tomatoes and season with salt and pepper. Sauté, shaking the pan frequently, until the tomatoes soften and skins just beginning to wrinkle, about 2 minutes.
